Beet salad with figs and greek yogurt


Hello, everybody. I hope that all of you enjoyed or still enjoying your holidays. After the summer vacations, I’m finally back to my blog. Couldn’t wait to bring you new recipes. This one is definitely inspired by our holidays in Greece. Fresh beetroot salad with figs is incredibly surprising. The mixture of beetroots with pine nuts, hazelnuts, and figs is really delicious and what I love the most about it is the mixture with a greek yogurt. Gives lovely fresh, silky and creamy taste to it. Hope you’ll enjoy as much as I do<3.


-6 medium beetroots, cut into cubes
-8 fresh figs, cut into half moon shape slices
-5 tbsp pine nuts, grilled
-3 tbsp hazelnuts, grilled
-1 tbsp coconut syrup, or sweeteners of your choice like maple, agave syrup or raw honey
-1 lemon, juiced
-3 leaves of fresh mint, chopped (optional)
-1 plain greek yogurt (I used sheep yogurt)
-virgin olive oil


Heat the olive oil over medium heat in a small saucepan. Add pine nuts and hazelnuts. Grill till golden. Set on the side to cool. Meanwhile, put the beetroots into large salad bowl. Pour the pine nuts and hazelnuts with olive oil you used for grilling into beetroots. Add coconut syrup, lemon juice, fresh mint, olive oil and salt. Mix well. Place in the fridge. Add figs right before serving. Serve with greek yogurt as a dip on the side.
