Holiday vanilla cookies are very easy and fast recipe. Very favorite in my native country. There is no home who would not prepare these cookies for a Christmas. I really love them. First of all the taste brings me straight back to my childhood second of all they are really delicious. Hope you would like as much as I do.
-240g light spelt flour
-180g butter or coconut oil for vegans
-120g walnut powder
-60g icing sugar or agave sugar
-2 tsp lemon zest
-1 tsp grounded vanilla
Preheat oven to 180°C. In a large bowl, cream together the butter and sugar until light and fluffy. Combine the spelt flour, walnut powder, grounded vanilla and lemon zest. Stir into butter mixture. Knead well with your hands to ensure the dough comes together properly. Cover dough and chill for at least one hour in a refrigerator. Shape little half-moons with your hands and place on the baking tray lined with a baking paper. Bake for about 10-15 minutes till lightly golden. You can lightly sprinkle with icing sugar before serving.
