Wheat berries with Paris mushrooms

Wheat berries are hearty, chewy and delicious. Combination of the grains and mushrooms is simply terrific. Hope you enjoy this easy vegan dish.


– 250g pre-cooked wheat berries
– 200g Paris mushrooms, sliced
– 1 medium red onion, chopped
– 1 tbsp carvi seeds
– 3 tbsp tamari sauce
– 2 cloves of garlic, crushed
– handful fresh coriander, chopped
– virgin olive oil
– sea salt

In a large saucepan, heat 2 tablespoons of olive oil. Add chopped onion and cook until translucent. Add mushrooms, carvi seeds, garlic, and coriander. Cover and simmer over moderately low heat, stirring occasionally, until the mushrooms are tender. Meanwhile, in a medium saucepan, heat a water with salt. Add pre-cooked wheat berries and boil until tender. Drain and rinse. Mix wheat berries with a sautè of mushrooms. Add tamari sauce and cook over low heat for another 15 minutes. Serve immediately.
